photo
An original recipe from Ray Lampe, Dr. BBQ

1 cedar cooking plank, soaked in water for an hour
Marinade
¼ cup maple syrup
¼ cup brown sugar
3 tablespoons soy sauce
1 tablespoon cornstarch
¼ teaspoon cayenne

4 pieces salmon filet, about 6 ounces each
½ cup pecans

An hour before you plan to cook make the marinade by whisking together the syrup, brown sugar, soy sauce, cornstarch, and cayenne in a medium glass bowl. Add the salmon and toss to coat well. Refrigerate for an hour. Prepare the Egg to cook direct at 350°. Take the fish out of the marinade and lay it on the plank. Put the pecans on top of the fish, and then pour the marinade over it all. Place the plank directly on the cooking grate and cook for about 30 minutes until the salmon is firm to the touch. Remove the plank in a sheet pan and serve from the plank.
