Redfish in green curry
|1 tbsp||Canola oil|
|1||red onion (course chop)|
|2 cloves||Garlic (minced)|
|1 tbsp||Green curry paste|
|1 can (14 oz)||coconut milk|
|1/2 lb||FRESH Snow Peas|
|1 1/2 lb||fresh redfish (cut into cubes)|
|3 tbsp||fine chop cilantro|
|1 1/2 cups||jasmine rice (cooked to directions)|
In a large saute pan heat oil over med heat and add onions and garlic saute till softened, @ 3 min. Stir in curry paste and coconut milk. Reduce heat to low and simmer 5 minutes to blend flavors.
Add snow peas and cook 2 minutes. Add redfish and simmer 5 minutes untill cooked through. Remove from heat and stir in cilantro. Salt to taste and serve over rice.
ok guys and gals a quick note... i added a little sesame oil to the rice for scent and flavor along with some chopped scallions. also if you are not a fan of spicy foods add a teaspoon of curry paste at a time to get desired flavor and heat. Dont eat this meal if you have sunburnt lips i do and they burnt for a while. The green beans can be blanched for a minute ahead of time if you prefer a green bean with less crunch and texture.
For beverage I had a nice thai beer such as "singha" but a dry white wine (dont want an over powering flavor) could work as well..
