Crispy Bass

Basicaly I fillett the Bass clean it off nice. Then I do a light lemon juice and garlic rub maronade for at least a half hour in the fridge. While the fish sits I get ready a batch of spiced potato's. Once again very simple. Cut about 5 large potatos into small chunks and put them in a tinfoil wrap. But before closing the wrap add some water to the mixture, just enough to moisten the potatos and then add your fav spices sprinkled on top. Close up the tinfoil and place on the BBQ for about 30mins on medium heat. They are very tasty with this fish. While the potatos are almost done u can now take the wrap and place it on the top rack or if u have a side burner then leave it where it is. Place a frying pan on the burner and heat it up on medium heat. Add your fav potato chips,crushed up very well. The chips will make there own oil and allow u to brown your fish very well. I and people who have had my fish enjoyed the Dill Pickled chips and BBQ. Place the fillets in the pan when the chip oil is present. Lett it simmer on both sides for about 2 mins each side.This will give your fish a distinct dill pickle or BBQ flavor. Then take them out of the pan and place them on the BBQ for about 2mins per side. This should make sure they are thoroughly cooked. Then simply place them on a plate, take your spiced potato's and por on top of the fish. Also you can add celery or anything u like to the potato's. So there u have it a simple shore or cottage or anytime meal that tastes great and is easy to throw togethor.
